Place chips on a microwave-safe plate in a single layer.
Microwave on high power until they smell toasty, about 30 seconds to 1 minute.
Remove from microwave. Sprinkle with shredded cheese. Add any of the optional toppings.
Return to microwave and cook for 30 seconds. Continue to cook in 15-second intervals until all the cheese is melted and bubbly.
Serve with salsa and sour cream on the side.
12 tortilla chips
2 to 4 ounces (55 to 110 grams) grated cheddar, jack, Colby or Oaxaca cheese
optional toppings: prepared chili, black or pinto beans, refried beans, jalapeño slices
to serve on the side: salsa, sour cream, guacamole
