Amazing Nachos Now

Place chips on a microwave-safe plate in a single layer.

Microwave on high power until they smell toasty, about 30 seconds to 1 minute.

Remove from microwave. Sprinkle with shredded cheese. Add any of the optional toppings.

Return to microwave and cook for 30 seconds. Continue to cook in 15-second intervals until all the cheese is melted and bubbly.

Serve with salsa and sour cream on the side.

The recipe as written makes one generous serving plate. You could easily double it if you have a large enough plate that fits in your microwave. And the whole process is so quick that you can repeat it as needed.

12 tortilla chips

2 to 4 ounces (55 to 110 grams) grated cheddar, jack, Colby or Oaxaca cheese

optional toppings: prepared chili, black or pinto beans, refried beans, jalapeño slices

to serve on the side: salsa, sour cream, guacamole
